Ingredients:

- 4 veal or pork loin cutlets
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 eggs
- 2 cups breadcrumbs
- 1 cup butter for frying
- Lemon wedges for serving

Instructions:

1. If using pork, trim the excess fat from the edges of the cutlets with a knife.
2. Season the meat cutlets with salt and pepper on both sides.
3. Prepare three separate plates: place the flour on the first plate, beaten eggs on the second, and breadcrumbs on the third.
4. Dip each cutlet first in the flour, then in the egg, and finally in the breadcrumbs. Ensure the cutlets are well coated.
5. Heat the butter in a frying pan over medium heat.
6. Fry the cutlets for about 3-4 minutes on each side until they are golden brown and crispy.
7. Remove the fried cutlets and let them drain on paper towels.
8. Serve with lemon wedges.
