A traditional Austrian dish made from thinly pounded and breaded meat, perfect for serving with mashed potatoes and lemon slices.

Ingredients

- Veal or pork cutlets
- 1 cup breadcrumbs
- ½ cup all-purpose flour
- 2 eggs
- 2 teaspoons ground white pepper
- Salt to taste
- Cooking oil for frying

Instructions

1. Bring the meat to room temperature, then slice it into thin pieces and pound them even thinner (about 2-4 mm thick).
2. Sprinkle salt and white pepper over the meat.
3. In a bowl or deep plate, crack the eggs. Place flour on one plate and breadcrumbs on another.
4. Dip the pounded meat first in the flour, then in the eggs, and finally in the breadcrumbs.
5. Heat a frying pan and add plenty of oil (enough for the schnitzels to almost submerge).
6. Fry the schnitzels in hot oil for about 1-1.5 minutes until golden brown.
7. Remove the schnitzels from the pan and place them on paper towels to absorb excess oil.
8. Serve immediately with mashed potatoes and lemon slices, squeezing lemon juice over the schnitzels.
