A delicious and refreshing dessert that combines sweet banana and tart rhubarb. This easy recipe is perfect for summer evenings! Preparation Time: 20 minutes
Serving Size: 4-6 servings
Ingredients:
- 1 cup white chocolate-lime yogurt or lemon yogurt
- Topping: chopped Wiener Nougat or nut mixture
- 2 cups heavy cream
- 1 ½ cups rhubarb pieces
- ¼ cup sugar
- 1 banana
Instructions:
1. Peel and chop the rhubarb.
2. Cook the rhubarb pieces in the microwave on high for 1-2 minutes.
3. Let the rhubarb cool and drain any excess liquid (save the liquid).
4. Cut the banana into pieces.
5. Whip the heavy cream until fluffy.
6. In a bowl, combine the yogurt with the cooked rhubarb pieces, banana pieces, and whipped cream.
7. Add sugar to taste and gently mix.
8. Spoon the mixture into serving dishes and sprinkle with chopped Wiener Nougat or nuts on top.
9. Serve immediately or chill in the refrigerator before serving.
