Ingredients:
- 1 cup cooked chickpeas (canned or boiled)
- 1/2 cup rolled oats
- 1 small onion (finely chopped)
- 2 garlic cloves (minced)
- 1 small carrot (grated)
- 1 red bell pepper (finely chopped)
- 1 tablespoon fresh parsley (chopped)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1 egg (optional, for binding)
Instructions:
1. Mash the chickpeas in a bowl until smooth.
2. Add the rolled oats, onion, garlic, carrot, bell pepper, parsley, olive oil, salt, black pepper, paprika, and cumin. Mix well.
3. If using, add the egg to the mixture and combine thoroughly.
4. Shape the mixture into round patties.
5. Heat a frying pan over medium heat and add a little oil.
6. Cook the patties for about 5-6 minutes on each side until golden brown.
7. Serve warm, ideally with a salad or sauce.
