A delicious and hearty potato stew that brings the flavors of Vienna to your home. Preparation time: 1 hour. Serving size: 4.Ingredients:
- 800 g potatoes
- 300 g carrots
- 200 g onion
- 150 g bell pepper
- 2 dl vegetable broth
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
1. Peel and chop the potatoes, carrots, onions, and bell pepper.
2. Heat the olive oil in a large pot over medium heat.
3. Add the onions and sauté for about 5 minutes.
4. Add the carrots and bell pepper, and cook for another 5 minutes.
5. Stir in the potatoes, vegetable broth, thyme, salt, and black pepper.
6. Allow the stew to simmer on low heat with the lid on for about 30 minutes, or until the potatoes are tender.
7. Serve hot.
