A delicious and hearty chicken and potato stew, perfect for a comforting family meal. Preparation Time: 1 hour
Serving Size: 4-6 people
Ingredients:
- 500 g chicken breast fillets - 700 g potatoes
- 1 large onion
- 2 cloves garlic
- 1 red bell pepper
- 1 can (400 g) crushed tomatoes
- 2 dl chicken broth
- 2 tbsp olive oil
- 1 tsp paprika powder
- 1 tsp salt
- ½ tsp black pepper
- Fresh parsley for garnish
Instructions:
1. Peel and chop the potatoes, onion, garlic, and red bell pepper. 2. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté for a few minutes until soft.
3. Add the chicken breast fillets to the pot and lightly brown them.
4. Stir in the paprika powder, salt, and black pepper. Mix well.
5. Add the chopped potatoes, bell pepper, crushed tomatoes, and chicken broth. Gently stir to combine.
6. Cover the pot with a lid and let it simmer on low heat for about 30-40 minutes, until the potatoes are tender.
7. Serve hot, garnished with fresh parsley.
