Ingredients:
- Pork tenderloin
- All-purpose flour
- Salt
- Black pepper
- Eggs
- Breadcrumbs
- Butter and oil for frying

- Anchovy fillets

Instructions:
1. Slice the pork tenderloin into thin pieces and gently pound them.
2. Season the meat with salt and black pepper.
3. Prepare three plates: place flour on one, beaten eggs on the second, and breadcrumbs on the third.
4. Dip each piece of meat first in flour, then in the eggs, and finally coat with breadcrumbs.
5. Heat butter and oil in a frying pan.
6. Fry the schnitzels on both sides until golden brown.
