Preparation Time: 10 hours (includes smoking and marinating)
Serving Size: 6–8

Ingredients:

- 2 kg pork shoulder
- 1 can Guinness beer
- 4 tbsp smoked paprika
- 2 tbsp salt
- 1 tbsp black pepper
- 2 tbsp brown sugar
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 1 tbsp cayenne pepper (optional)
- 1 dl apple cider vinegar
- 1 dl BBQ sauce (for serving)
- Smoking wood chips (e.g., applewood or hickory)

Instructions:

1. In a bowl, mix all the dry spices (smoked paprika, salt, black pepper, brown sugar, garlic powder, onion powder, and cayenne pepper).
2. Rub the spice mixture evenly over the pork shoulder. Cover the meat with plastic wrap and marinate in the refrigerator for at least 4 hours, preferably overnight.
3. Prepare your smoker or charcoal grill for smoking. Heat it to around 110-120 °C (225-250 °F).
4. Place the pork in the smoker and pour the Guinness beer and apple cider vinegar over it.
5. Smoke the meat for about 8 hours, until it reaches an internal temperature of 90 °C (194 °F). The meat should pull apart easily with a fork.
6. Remove the meat from the smoker, cover it with foil, and let it rest for about 30 minutes.
7. Shred the meat using two forks and mix it with the BBQ sauce.
8. Serve warm with buns or sides of your choice.
