Ingredients:

- 500 g reindeer fillet
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 300 g potatoes
- 150 g root celery
- 2 tablespoons butter
- 100 ml cream
- 1 tablespoon fresh thyme
- 200 g cabbage
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar

Instructions:

1. Preheat the oven to 180°C (350°F).
2. Season the reindeer fillet with salt and black pepper.
3. Heat olive oil in a skillet and sear the reindeer fillet for about 3-4 minutes on each side until nicely browned.
4. Transfer the fillets to a baking dish and roast in the oven for about 15-20 minutes until the internal temperature reaches 58°C (medium).
5. Peel and chop the potatoes and root celery. Boil them in salted water until soft.
6. Drain the water and mash the boiled potatoes and root celery with butter and cream until smooth. Season with thyme.
7. Shred the cabbage and sauté it in the skillet with honey and balsamic vinegar for about 5 minutes until tender.
8. Plate the reindeer fillet, mashed potatoes, and sautéed cabbage.
