Serving Size: 4 servings
Ingredients:
- 150 g fresh spinach - 100 g cherry tomatoes
- 1 avocado
- 1/2 cucumber
- 50 g feta cheese
- 1/4 red onion
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh herbs (e.g., basil or parsley)
Instructions:
1. Rinse the spinach and dry it. Place it in a large salad bowl. 2. Halve the cherry tomatoes and add them to the bowl.
3. Peel the avocado and slice it, then add to the salad.
4. Slice the cucumber and red onion, and add them to the salad.
5. Crumble the feta cheese over the salad.
6. In a small bowl, mix the olive oil and balsamic vinegar. Season with salt and pepper.
7. Drizzle the dressing over the salad and gently toss to combine.
8. Garnish with fresh herbs before serving.
