Ingredients:

- 125 g spelt flour
- 75 g muscovado sugar
- 100 g butter (at room temperature)
- 1 tsp vanilla extract
- 1 egg
- 1/2 tsp salt
- 1/2 tsp baking powder

Instructions:

1. Preheat the oven to 180°C (160°C for fan oven).
2. In a bowl, whisk together the butter and muscovado sugar until the mixture is light and fluffy.
3. Add the egg and vanilla extract, and mix well.
4. In another bowl, combine the spelt flour, salt, and baking powder.
5. Gradually add the dry ingredients to the butter mixture and mix until a smooth dough forms.
6. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
7. Bake in the oven for about 10-12 minutes, until the cookies are lightly golden brown.
8. Allow to cool before serving.
