A gourmet vegetarian dish that brings fine dining to your home. Preparation time: 30 minutes. Servings: 4.Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 2 zucchinis, sliced
- 200 g mushrooms, sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 can (400 g) crushed tomatoes
- 200 g chickpeas, rinsed and drained
- 100 g fresh spinach
- 50 g grated Parmesan cheese (or vegan cheese)
Instructions:
1. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic. Sauté until onions are soft.
2. Add diced bell pepper and sliced zucchini. Cook for about 5 minutes until vegetables start to soften.
3. Add sliced mushrooms, salt, black pepper, and dried thyme. Continue to cook for another 5 minutes.
4. Pour in the crushed tomatoes and chickpeas. Stir well and let simmer on low heat for about 10 minutes.
5. Add fresh spinach and mix until the spinach wilts.
6. Serve the dish warm, topped with grated Parmesan cheese.
