A delicious and quick pasta dish perfect for relaxing on a Sunday evening. It’s easy to prepare and loved by the whole family. Preparation Time: 30 minutes

Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli) - 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 red onion, chopped
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little cooking water. 2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and chopped red onion, sautéing for about 3-4 minutes.
3. Add the halved cherry tomatoes and cook for another 5 minutes until the tomatoes soften.
4. Stir in the fresh spinach and let it wilt.
5. Add the cooked pasta to the skillet and mix well. If necessary, add a bit of the reserved cooking water to prevent the pasta from being too dry.
6. Season with salt and pepper. Sprinkle grated Parmesan cheese on top and mix.
7. Serve immediately, garnished with fresh basil.
