A delicious and easy Lapland dish made from reindeer meat, served with buttery mashed potatoes and honey-glazed onions. Preparation Time: 1 hour
Serving Size: 4
Ingredients:
- 500 g reindeer loin
- 2 tbsp butter
- 1 onion
- 100 ml water
- Salt and pepper to taste
- 800 g potatoes
- 50 g butter (for mashed potatoes)
- 100 ml milk (for mashed potatoes)
- 2 tbsp honey (for onions)
Instructions:
1. Take the reindeer loin out of the freezer about an hour before cooking to make it easier to slice thinly.
2. Cut the reindeer meat into thin strips.
3. Heat the butter in a skillet and add the sliced onion. Sauté the onion until it is soft.
4. Add the reindeer meat to the skillet and cook until it is nicely browned.
5. Pour the water into the skillet and season with salt and pepper. Simmer on low heat for about 20 minutes.
6. Peel and boil the potatoes in salted water until soft. Drain the water and mash the potatoes with the butter and milk.
7. Chop the onions and cook them in the skillet with honey until caramelized.
8. Serve the poronkäristys with mashed potatoes and honey-glazed onions.
