Ingredients:
- 300 g fresh pasta - 200 g finely chopped tomatoes
- 100 g mozzarella cheese, diced
- 50 g fresh basil, chopped
- 3 tbsp olive oil
- 2 cloves garlic, crushed
- Salt and black pepper to taste
- Grated Parmesan cheese for serving
Instructions:
1. Cook the fresh pasta in salted water according to the package instructions. Drain and reserve a little pasta water.2. Heat the olive oil in a large skillet over medium heat. Add the crushed garlic and sauté until golden.
3. Add the chopped tomatoes to the skillet and cook for about 10 minutes until the sauce thickens. Season with salt and black pepper.
4. Add the cooked pasta to the sauce and mix well. If needed, add a little reserved pasta water to moisten the pasta.
5. Remove the skillet from heat and stir in the mozzarella cheese cubes and fresh basil. Mix gently.
6. Serve the portions warm and sprinkle with grated Parmesan cheese.
