Ingredients:
- 2 dl red lentils
- 1 onion
- 2 cloves garlic
- 2 carrots
- 1 potato
- 1 l vegetable broth
- 1 tsp curry powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Fresh mint (for serving, optional)
Instructions:
1. Peel and chop the onion, garlic, carrots, and potato.
2. Heat olive oil in a pot and sauté the onion and garlic until soft.
3. Add the carrots and potato, and cook for a few more minutes.
4. Pour in the vegetable broth and add the red lentils, curry powder, salt, and black pepper.
5. Cook the soup for about 20-25 minutes, until the lentils and vegetables are tender.
6. Blend the soup with an immersion blender if desired, or leave it slightly chunky.
7. Serve the soup warm with fresh mint and mint jelly on the side.
