Serving Size: 4 servings
Ingredients:
- 1 cup green or brown lentils - 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, sliced
- 1 can (14 oz) crushed tomatoes
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until softened. 2. Add the minced garlic, diced carrots, and sliced celery. Cook for a few minutes until the vegetables start to soften.
3. Stir in the crushed tomatoes, vegetable broth, lentils, thyme, and paprika. Bring to a boil, then reduce the heat.
4. Let the soup simmer on low heat for about 30 minutes or until the lentils are tender.
5. Season with salt and pepper. Serve the soup garnished with fresh parsley.
