Ingredients:

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 celery stalks, sliced
- 4 potatoes, diced
- 1 liter vegetable broth
- 1 can (400 g) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 100 ml fresh parsley, chopped

Instructions:

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and crushed garlic. Sauté for about 3-4 minutes until the onion is soft.
3. Add diced carrots and sliced celery. Continue to cook for about 5 minutes.
4. Stir in the diced potatoes and mix well.
5. Pour in the vegetable broth and crushed tomatoes. Add oregano, salt, and black pepper. Bring to a boil.
6. Reduce heat and let the soup simmer for about 20 minutes until the vegetables are tender.
7. Remove the soup from heat and stir in the chopped parsley.
8. Serve warm and enjoy!
