Ingredients:
- 3 overripe bananas
- 75 g butter (softened)
- 150 g sugar
- 2 eggs
- 200 g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 mandarins (peeled and chopped)
- 50 g nuts (optional)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a loaf pan.
2. Mash the overripe bananas in a bowl.
3. Add the softened butter, sugar, and eggs to the bananas. Mix well.
4. In another bowl, combine the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
5. Add the dry ingredients to the banana mixture and stir until smooth.
6. Gently fold in the chopped mandarins and nuts, if using.
7. Pour the batter into the prepared pan and level the top.
8. Bake in the oven for about 50-60 minutes, until the cake is golden brown and a toothpick inserted comes out clean.
9. Allow the cake to cool before serving.
