A delicious and nutritious lentil bolognese, perfect as a vegetarian alternative to traditional bolognese sauce. This dish is easy to prepare and full of flavor! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 cup dried red lentils
- 1 onion
- 2 garlic cloves
- 1 carrot
- 1 red bell pepper
- 14 oz crushed tomatoes
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil (for garnish)
Instructions:
1. Rinse the red lentils under cold water and drain them.
2. Peel and chop the onion and garlic. Peel and grate the carrot. Chop the red bell pepper.
3. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, sauté until soft.
4. Add the carrot and bell pepper, continue cooking for about 5 minutes.
5. Stir in the rinsed lentils, crushed tomatoes, balsamic vinegar, oregano, and basil. Mix well.
6. Add water if needed and season with salt and pepper. Let the sauce simmer on low heat for about 20 minutes, until the lentils are tender.
7. Serve the lentil bolognese with pasta and garnish with fresh basil leaves.
