This nutritious and delicious lentil soup is easy to prepare and perfect for a light lunch or dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 cup red lentils
- 1 onion
- 2 garlic cloves
- 2 carrots
- 1 celery stalk
- 1 tsp cumin
- 1 tsp smoked paprika
- 4 cups vegetable broth
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 1 tbsp lemon juice
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion, garlic, carrots, and celery.
2. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté for about 5 minutes.
3. Add carrots and celery, continue to sauté for another 5 minutes.
4. Stir in lentils, cumin, and smoked paprika, mixing well.
5. Pour in vegetable broth and bring to a boil. Reduce heat and let the soup simmer for about 20 minutes, until the lentils are tender.
6. Season with salt, black pepper, and lemon juice.
7. Serve hot, garnished with fresh parsley.
