Ingredients

- 1 ½ cups red lentils
- 2 medium potatoes, diced
- 2 medium carrots, diced
- 1 onion, chopped
- 8 cups chicken or beef broth
- 1 tablespoon all-purpose flour
- Salt and pepper to taste
- 2 tablespoons olive oil

Instructions

1. Peel and dice the onion, potatoes, and carrots into small cubes.
2. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft.
3. Add the diced potatoes and carrots to the pot, cooking for a few minutes.
4. Stir in the red lentils and mix well.
5. Pour the chicken or beef broth into the pot and bring the mixture to a boil.
6. Reduce the heat and let the soup simmer for about 20-25 minutes, until the lentils and vegetables are tender.
7. Mix the flour with a small amount of water and add it to the soup to thicken it. Let it simmer for a few more minutes.
8. Season with salt and pepper to taste. Serve warm.
