This delicious Indian lentil soup is packed with flavor and nutrients. It's easy to make and perfect for a weekday dinner or a light lunch. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 cup dry lentils (such as red or green)- 1 can crushed tomatoes
- 1 can coconut milk
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 cups water
- Fresh coriander (for garnish)
Instructions:
1. Rinse the lentils in cold water and drain.2. In a pot, heat a little oil and add the chopped onion and minced garlic. Sauté until they are soft.
3. Add the curry powder and turmeric, and cook while stirring for about a minute.
4. Add the rinsed lentils, crushed tomatoes, coconut milk, salt, black pepper, and water to the pot. Mix well.
5. Bring the soup to a boil, then reduce to medium heat and simmer for about 20-25 minutes, or until the lentils are soft.
6. Serve hot, garnished with fresh coriander.
