Serving Size: 4 people

Ingredients:

- 400 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g mushrooms, sliced
- 400 g canned crushed tomatoes
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 100 g Parmesan cheese, grated
- Fresh basil for garnish

Instructions:

1. Cook the pasta according to the package instructions in salted water. Drain and save a little pasta water.
2. Heat olive oil in a large frying pan over medium heat. Add the onion and sauté until soft.
3. Add crushed garlic, bell pepper, and mushrooms. Sauté until the vegetables are tender.
4. Stir in the crushed tomatoes, oregano, salt, and black pepper. Let it simmer for about 10 minutes.
5. Mix the cooked pasta into the sauce. Add a bit of pasta water if needed for a pleasant consistency.
6. Serve the dishes topped with grated Parmesan cheese and fresh basil.
