Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 100 g fresh spinach
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sautéing for a few minutes until softened.
3. Add the bell pepper and cook for another 3-4 minutes until slightly softened.
4. Stir in the cherry tomatoes and spinach, cooking for a few more minutes until the spinach wilts.
5. Combine the cooked pasta with the vegetables, adding reserved cooking water if needed for moisture.
6. Season with basil, salt, and pepper. Mix well.
7. Serve warm, topped with grated Parmesan cheese.
