Spaghetti Aglio e Olio

A quick and delicious Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 tsp red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and then drain the pasta. 2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2 minutes.
3. Add the red chili flakes to the skillet and stir for another 30 seconds.
4. Add the drained spaghetti to the skillet along with a splash of the reserved pasta water. Toss everything together to combine, adding more pasta water as needed to create a light sauce.
5. Season with salt to taste, and garnish with chopped parsley and grated Parmesan cheese if desired.
6. Serve immediately.
