This Easy Pasta Pesto is a delicious and quick meal that combines al dente pasta with fresh pesto, cherry tomatoes, and grated Parmesan for a burst of flavor.
Ingredients:
- 250 g pasta (e.g., penne or fusilli)
- 100 g pesto
- 50 g Parmesan cheese (grated)
- 100 g cherry tomatoes (halved)
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Fresh basil (for garnish)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat.
3. Add the drained pasta to the skillet and mix in the pesto. If the pasta seems dry, add a bit of the reserved cooking water.
4. Stir in the cherry tomatoes gently.
5. Season with salt and black pepper to taste.
6. Serve the pasta on plates and sprinkle with grated Parmesan cheese and fresh basil. Enjoy!
