Delicious Vegetable Pasta

Ingredients:
- 250 g pasta (e.g. spaghetti or fusilli)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried oregano
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sautéing for about 2-3 minutes.
3. Add bell pepper and zucchini, and cook for another 5-7 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes and oregano, seasoning with salt and pepper. Cook for an additional 3-4 minutes.
5. Combine the cooked pasta with the vegetables in the skillet. If needed, add a bit of reserved cooking water to moisten the mixture.
6. Serve topped with grated Parmesan cheese and fresh basil, if desired. Enjoy!
