Ingredients:
- 50 g red onion, chopped - 400 g fresh tomatoes, diced (or 400 g canned tomatoes)
- A handful of fresh basil
- Olive oil
- Salt and black pepper
- A dollop of butter
- 150-200 g spaghetti
- Parmesan cheese
Instructions:
1. Sauté the chopped red onion in olive oil for about 5-10 minutes until it softens and begins to caramelize. 2. Add the diced tomatoes to the pan and season with a pinch of salt. Let it simmer slowly for about 20-30 minutes.
3. Cook the spaghetti in a large pot of salted boiling water according to the package instructions.
4. Stir in the chopped basil into the sauce, reserving some for garnish.
5. Blend the sauce with an immersion blender to your desired consistency. Pour the sauce back into the pan.
6. Add the butter and season with pepper and, if needed, more salt and sugar. Simmer for another 5 minutes.
7. Drain the spaghetti and add it to the pan, mixing the ingredients well.
8. Serve on plates and garnish with Parmesan cheese.
