Ingredients:
- 2 ripe persimmons
- 150 g feta cheese
- 100 g arugula
- 1 dl nuts (e.g., walnuts or almonds)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the arugula and dry it well.
2. Peel and slice the persimmons into thin pieces.
3. Crumble the feta cheese into small pieces.
4. Lightly toast the nuts in a pan until they are slightly colored.
5. In a bowl, combine the arugula, persimmon slices, feta cheese, and toasted nuts.
6. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper.
7. Drizzle the dressing over the salad and toss gently.
8. Serve immediately and enjoy!
