A delightful dish that combines sweet roasted tomatoes with creamy whipped feta, perfect as a side or a light main course. Preparation time is about 30 minutes. Ingredients:
- 500 g cherry tomatoes - 200 g feta cheese
- 100 g Greek yogurt
- 2 tbsp olive oil
- 1 tbsp honey
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions:
1. Preheat the oven to 200°C (400°F). 2. Rinse the cherry tomatoes and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss well to coat.
3. Roast the tomatoes in the oven for about 20 minutes, until they are soft and slightly browned.
4. Meanwhile, crumble the feta cheese into a bowl and add the Greek yogurt. Whip the mixture until it is fluffy and well combined.
5. Remove the tomatoes from the oven and let them cool slightly.
6. Serve the roasted tomatoes on top of the whipped feta. Drizzle with honey and garnish with fresh basil.
