Whipped Feta with Lemon-Herb Lentils

Ingredients:
- 200 g feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
- 1 dl red lentils
- 2 dl water
- 1 lemon (zest and juice)
- Fresh herbs (such as parsley, basil, or thyme)
Instructions:
1. Cook the red lentils in water for about 15 minutes, until soft. Drain and let cool.
2. In a bowl, combine the feta cheese, olive oil, lemon juice, minced garlic, salt, and pepper. Whisk until the mixture is fluffy and creamy.
3. Add the cooled lentils to the feta mixture and stir well to combine.
4. Grate the lemon zest and squeeze the lemon juice into the lentil mixture. Fold in the chopped fresh herbs gently.
5. Serve the whipped feta alongside the lemon-herb lentils, either on its own or with fresh bread.
