Ingredients:
- 250 g pasta (e.g. penne or fusilli)
- 200 g cooked beetroot (diced)
- 150 g feta cheese (crumbled)
- 2 tbsp olive oil
- 1 garlic clove (minced)
- 1 tsp fresh thyme (or ½ tsp dried)
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain, reserving a little cooking water.
2. Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté for a few minutes until fragrant.
3. Add the diced beetroot and thyme to the pan, mixing well. Cook for about 5 minutes.
4. Add the cooked pasta to the pan and mix well. If needed, add reserved cooking water to keep the pasta moist.
5. Stir in the crumbled feta and season with salt and pepper.
6. Serve the pasta garnished with fresh basil.
