Serving Size: 4 servings
Ingredients:
- 400 g salmon fillet
- 4 medium potatoes
- 1 large carrot
- 1 onion
- 1 liter fish stock
- 200 ml heavy cream
- 100 ml fresh or dried dill
- Salt to taste
- Black pepper to taste
- Butter for sautéing
Instructions:
1. Peel and dice the potatoes and carrot into small cubes. Finely chop the onion.
2. Heat butter in a large pot and sauté the onion until it is soft.
3. Add the potatoes and carrot to the pot, then pour in the fish stock. Cook over medium heat for about 15 minutes until the vegetables are tender.
4. Cut the salmon fillet into pieces and add it to the soup. Let it simmer for another 5-7 minutes until the salmon is cooked through.
5. Stir in the cream and dill, and season with salt and black pepper. Heat gently for a moment but do not boil.
6. Serve hot and enjoy!
