Green and Orange Salmon Soup

Ingredients:
- 1 sweet potato - 1 onion
- 1 leek (green and light part)
- A generous amount of fresh chives
- 1 liter of good fish stock
- 2 whole white peppercorns
- 1-2 teaspoons of salt (to taste)
- 300 g salmon (cubed)
- 100 ml cream (optional)
Instructions:
1. Peel and cube the sweet potato. 2. Chop the onion and leek.
3. Heat the fish stock in a pot and add the sweet potato, onion, and leek.
4. Add the white peppercorns and salt.
5. Cook the vegetables for about 15-20 minutes, until the sweet potato is tender.
6. Add the salmon cubes to the soup and cook for another 5-7 minutes, until the salmon is cooked through.
7. If using cream, add it to the soup just before serving.
8. Finish the soup with fresh chives and serve immediately.
