Ingredients:

- 200 g tempeh
- 1 fresh pineapple
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 skewers (wooden or metal)

Peanut Coconut Sauce:

- 150 ml coconut milk
- 3 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp maple syrup or honey (optional)
- 1 garlic clove, minced
- Pinch of cayenne pepper (optional)

Instructions:

1. Cut the tempeh into cubes and the pineapple into chunks.
2. Heat olive oil in a pan over medium heat. Add the tempeh cubes and sauté for about 5-7 minutes until golden brown. Season with salt and pepper.
3. Add the pineapple chunks to the pan and cook for a few more minutes until they soften and gain some color.
4. Prepare the peanut coconut sauce: In a bowl, mix all sauce ingredients until smooth.
5. Assemble the skewers by alternating pieces of tempeh and pineapple.
6. Serve the skewers warm with the peanut coconut sauce on the side.
