Muarin Lohikeitto is a traditional Finnish salmon soup that combines tender potatoes, rich cream, and fresh dill for a comforting dish perfect for any occasion.
Ingredients:
- 1-1.5 liters of water
- 2 fish stock cubes
- 1 tablespoon of caraway seeds (optional)
- 6 whole black and white peppercorns
- 1 bay leaf
- 2 chopped onions
- 400 g salmon fillet
- 3 potatoes
- 2 dl cream
- Salt to taste
- Fresh dill for garnish
Instructions:
1. Peel and dice the potatoes.
2. Bring the water to a boil in a pot and add the fish stock cubes, caraway seeds (if using), peppercorns, bay leaf, and chopped onions.
3. Add the diced potatoes to the soup and cook for about 10-15 minutes, until the potatoes are tender.
4. Cut the salmon fillet into pieces and add them to the soup. Cook for an additional 5-10 minutes.
5. Stir in the cream and season with salt to taste. Heat the soup, but do not boil.
6. Serve the soup garnished with fresh dill.
