A delicious coconut fish soup that combines tropical flavors with traditional fish stew. It’s a perfect weekday meal that warms the heart and body.

Ingredients:

- 400 g salmon fillets
- 1 can (400 ml) coconut milk
- 1 liter fish broth
- 1 onion
- 2 garlic cloves
- 1 small piece of ginger
- 1 red chili
- 1 lime
- 2 carrots
- 1 bell pepper
- Salt and pepper to taste
- Fresh cilantro for garnish

Instructions:

1. Peel and finely chop the onion, garlic, and ginger. Peel and slice the carrots and bell pepper.
2. Heat a splash of oil in a pot and sauté the onion, garlic, and ginger until soft.
3. Add the carrots and bell pepper to the pot and sauté for a few minutes.
4. Pour in the fish broth and bring to a boil. Let it simmer for about 10 minutes until the vegetables are tender.
5. Add the coconut milk and diced salmon fillets. Cook for another 5-7 minutes until the salmon is cooked through.
6. Season the soup with salt, pepper, and lime juice. Add the chopped chili to taste.
7. Serve the soup garnished with fresh cilantro.
