A colorful and healthy vegetable stir-fry, perfect for a quick weeknight dinner. Preparation time: 20 minutes

Ingredients:
- 2 cups broccoli florets - 1 red bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- Sesame seeds for garnish (optional)
Instructions:
1. Heat the vegetable oil in a large skillet or wok over medium-high heat. 2. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.
3. Add the broccoli, bell pepper, snap peas, and carrot to the skillet. Stir-fry for about 5-7 minutes until vegetables are tender but still crisp.
4. Pour in the soy sauce and sesame oil, stirring to coat the vegetables evenly. Cook for an additional 2 minutes.
5. Remove from heat and garnish with chopped green onions and sesame seeds if desired.
6. Serve warm over cooked rice or noodles.
