Sieni Stir Fry with Broccoli

A delicious and nutritious stir-fry dish that combines dried and fresh mushrooms with broccoli. A perfect vegetarian meal that's easy to prepare. Preparation Time: 30 minutes
Serving Size: 2-3 servings
Ingredients:
- About 1 dl dried mushrooms (e.g., chanterelles or porcini)- About 3 dl water
- 150 g fresh mushrooms (e.g., shiitake)
- 300 g broccoli
- 2 shallots
- 2 garlic cloves
- A small piece of ginger
- 1 red chili (or to taste)
- A splash (about 2 tbsp) of sesame oil
- 1-2 tbsp soy sauce
- 1-2 tbsp rice vinegar
- A handful of cashew nuts
- 1-2 tbsp sesame seeds
- Green onions for garnish
Instructions:
1. Soak the dried mushrooms in water for several hours.2. Wash the broccoli, separate the florets, and peel the stalk. Slice the stalk into thin pieces.
3. Pre-cook the broccoli florets and stalk in boiling salted water for 1-3 minutes. Drain and set aside.
4. Peel and finely chop the shallots, garlic cloves, and ginger. Remove seeds from the chili and chop finely.
5. Heat the sesame oil in a pan and sauté the shallots and garlic for about 2 minutes.
6. Add the chili, ginger, and cashew nuts, and continue to sauté for another 1-2 minutes.
7. Add the soaked and fresh mushrooms, broccoli, soy sauce, rice vinegar, and a little of the mushroom soaking water. Cook for a couple of minutes.
8. Finish with sesame seeds and chopped green onions. Check the seasoning and add more soy sauce if necessary.
9. Serve with rice.
