This delicious mushroom potato casserole utilizes leftovers from the previous day and makes for a perfect meal for four.
Ingredients:
- 500 g potatoes
- 200 g mushrooms (e.g., champignons or funnel chanterelles)
- 1 onion
- 2 dl cream
- 1 dl milk
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp nutmeg
- 100 g cheese (e.g., Emmental or mozzarella), grated
Instructions:
1. Peel and boil the potatoes in salted water until soft. Drain and mash the potatoes.
2. Peel and chop the onion. Sauté the onion in butter in a pan until soft.
3. Add the chopped mushrooms to the onion and cook until the mushrooms are tender and the moisture has evaporated.
4. Mix the cream, milk, salt, black pepper, and nutmeg into the mashed potatoes.
5. Fold in the sautéed mushrooms and onions into the potato mixture and mix well.
6. Pour the mixture into a greased baking dish and smooth the surface.
7. Sprinkle the grated cheese on top of the casserole.
8. Bake at 200°C (392°F) for about 25-30 minutes, until the top is beautifully golden brown.
