Vegetable Stir-Fry

A quick and colorful dish packed with fresh vegetables. Preparation time: 20 minutes
Serving size: 4 servings
Ingredients:
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 2 carrots, julienned
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
3. Add broccoli, bell peppers, snap peas, and carrots to the skillet. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
4. Pour in soy sauce and stir well to combine. Cook for an additional 2 minutes.
5. Season with salt and pepper to taste.
6. Serve hot over cooked rice or noodles.
