A quick and healthy vegetable stir-fry packed with flavor. Perfect for a weeknight dinner!

Serving Size: 4 servings
Ingredients:
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon sesame seeds (optional)
- Cooked rice or noodles for serving
Instructions:
1. Heat the olive oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and grated ginger, sauté for about 1 minute until fragrant.
3. Add the broccoli, bell pepper, snap peas, and carrot to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
4. Pour the soy sauce over the vegetables and toss to coat evenly. Cook for an additional 2 minutes.
5. Remove from heat and sprinkle with sesame seeds if desired.
6. Serve hot over cooked rice or noodles.
