A quick and colorful vegetable stir-fry packed with nutrients and flavor.

Serving Size: 4 servings
Ingredients:
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 3 green onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add minced garlic and sauté for about 30 seconds until fragrant.
3. Add broccoli, red bell pepper, snap peas, and carrot to the skillet. Stir-fry for about 5-7 minutes until vegetables are tender but still crisp.
4. Pour in the soy sauce and sesame oil, then stir to combine. Cook for an additional 2 minutes.
5. Season with salt and pepper to taste.
6. Remove from heat and sprinkle with chopped green onions and sesame seeds if desired.
7. Serve hot over cooked rice or noodles.
