A quick and nutritious vegetable stir-fry that makes a perfect side dish or a light main meal.

Ingredients:

- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Optional: Cooked rice or noodles for serving

Instructions:

1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and sauté for about 30 seconds until fragrant.
3. Add the sliced bell pepper and carrot to the skillet. Stir-fry for 2-3 minutes.
4. Add the broccoli florets and snap peas, continuing to stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
5. Pour in the soy sauce and sesame oil, tossing everything together. Season with salt and pepper to taste.
6. Remove from heat and serve hot over cooked rice or noodles if desired.
