Vegetable Stir-Fry

A colorful and nutritious vegetable stir-fry that's quick to prepare and packed with flavor. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 medium carrot, julienned
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds (optional)
- Cooked rice or noodles for serving
Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add the garlic and ginger, and sauté for about 30 seconds until fragrant.
3. Add the sliced bell pepper, carrot, and broccoli. Stir-fry for about 3-4 minutes until they begin to soften.
4. Toss in the snap peas and continue to stir-fry for an additional 2-3 minutes.
5. Pour in the soy sauce and sesame oil, mixing well to coat all the vegetables. Cook for another minute.
6. Remove from heat and sprinkle with sesame seeds if desired.
7. Serve hot over cooked rice or noodles.
