Vegetable Stir-Fry

A quick and colorful mix of fresh vegetables sautéed to perfection. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add minced garlic and sauté for about 30 seconds until fragrant.
3. Add broccoli, bell peppers, and carrot to the skillet. Stir-fry for 5 minutes, or until the vegetables are tender-crisp.
4. Toss in the snap peas and continue to stir-fry for an additional 2-3 minutes.
5. Drizzle soy sauce and sesame oil over the vegetables, stirring well to combine. Season with salt and pepper to taste.
6. Serve hot over cooked rice or noodles.
