Serving Size: 4 servings
Ingredients:
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 1 cup mushrooms, sliced
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant.
3. Add broccoli, bell pepper, snap peas, carrot, and mushrooms to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
4. Pour in the soy sauce, and stir to combine. Cook for another 2-3 minutes.
5. Season with salt and pepper to taste.
6. Serve hot over cooked rice or noodles.
