A quick and colorful vegetable stir-fry that’s perfect for a healthy meal. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 2 tablespoons vegetable oil - 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions:
1. Heat the vegetable oil in a large pan or wok over medium-high heat. 2. Add the minced garlic and sauté for about 30 seconds until fragrant.
3. Add the sliced bell pepper, broccoli, snap peas, and carrot. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
4. Stir in the chopped green onions, soy sauce, and sesame oil. Cook for an additional 2 minutes.
5. Season with salt and pepper to taste.
6. Serve hot over rice or noodles if desired.
