Serving Size: 4 servings
Ingredients:
- 2 cups broccoli florets - 1 cup bell peppers, sliced (any color)
- 1 cup carrots, julienned
- 1 cup snap peas
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles (for serving)
Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat. 2. Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant.
3. Add broccoli, bell peppers, carrots, and snap peas to the skillet. Stir-fry for 5-7 minutes, or until vegetables are tender-crisp.
4. Pour soy sauce over the vegetables and stir well to combine. Cook for an additional 2 minutes.
5. Season with salt and pepper to taste.
6. Serve hot over cooked rice or noodles.
